Estonian Courgette Salad/Estisk courgette relish

Courgette-Salad
Triins courgette-Salad, here “made in Denmark” 🙂

English version (dansk version efter denne): Most of the recipes on my blog are in danish. But it makes sense to write this one in english as well, as I have it from my estonian friend Triin Toome-Hosman.

I am a member of a European town twinning association with one town from each of the member states of the European Union. The association is called The Douzelage. My city, Holstebro, is the danish city-member in the association, and we have been a member since 1991. I joined the organisation in 1992 and became the head of the danish group in 2006. Many years ago I met Martijn Hosman from the dutch town of Meerssen at a Douzelage-meeting, and we became friends. Martijns father Joop was also an active Douzelage-member.
